For playing the teletext or DVB subtitles extracted by DVBViewer Recorder in SageTV you need to apply the included subtitles import into SageTV (This is a derivation work of the Closed Caption Playback STV Import).
You'll find the STV to import for SageTV 6 in the Recorder Config & Log directory ("C:\Documents And Settings\All Users\Application\LM Gestion\DVBViewer Recoder" or "C:\ProgramData\LM Gestion\DVBViewer Recorder"). You need to copy the files from the "plugins\SageTV" into the SageTV directory. The included STVi works for SageMC or default SageTV STV : currently the STV file is an XML file for SageMC to import into the default SageTV STV, rename it to .stvi.
For SageTV 7 the STVi is also included in the plug-ins folder but is also available directly from SageTV as a native plug-ins. To install the plug-in from SageTV, go to "Setup" -> "Plug-ins" -> "All Plug-ins" and find the "DVB / TTX Subtitles Playback" plug-in (in the "UI Mod" category) and install it.
To display the subtitles you can choose to automatically display them or you can enable them only when you want to (In SageTV go to "Setup" -> "Detailled" -> "Customize", and you'll find subtitles options at / near the end of the list).

Once you enabled the captions you should see them on the bottom of your screen. However, SageTV currently have very bad timing for Transport Streams recordings, so the subtitles can be off (especially for already recorded shows, not so with LiveTV). The subtitles will always be off when you are not playing the show from the very beginning.
Fortunately you can sync the captions very easily if you have a reference point. The principle is this : you'll have to browse the availabe captions until the correct one is displayed. To do this, start playing your video and once you found your reference point (for instance the very first dialog) pause the video.

You should see this screen. In the middle of the screen will be displayed the caption SageTV think it should display at that time. Simply use the Up and Down keys on your remote or keyboard to browse through the captions :

When the right captions is displayed, unpause the video, the captions will be now in sync with the video.
It is possible though that the captions will progressively get out of sync during playback. You can quickly adjust to compensate the drift with Up and Down (Up will show caption 500ms later for each press, Down will show caption 500ms earlier).
Live TV
You'll be able to display captions with Live TV. Be sure to make a short pause (a few seconds only) so as the subtitles are available to display. The good news is that with Live TV the caption sync should be almost perfect (because you are playing the show from the begining usually).
